Ingredients: 2 cups cooked quinoa 1 carrot, shredded or finely diced 3 green onions, finely diced 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 1/4 teaspoon thyme 3 eggs, beaten 1/2 cup whole wheat breadcrumbs or panko 3 oz softened goat cheese 1-2 tablespoons avocado oil (feel free to use olive oil if you don't have avocado) sliced avocado (for garnish) your favorite hummus Instructions: 1. Robyn, What do YOU eat and what is your exercise routine? Good questions! No one wants a coach or trainer who doesn't "walk the talk". I eat a diet of unprocessed foods containing lots of fruits and veggies, low glycemic starches (rice, buckwheat, oatmeal, sprouted bread, sweet potatoes), healthy fats (avocado, olive oil, nuts, seeds), organic/grass fed meats, free-range poultry, fish, low-fat dairy (greek yogurt, cottage cheese) and pastured eggs. Am I perfect? Heck no! I believe and teach moderation and DO NOT subscribe to restriction or fad diets. I teach my clients to enjoy "JOY" foods 10% of the time when trying to lose weight. Why oh why did I forget to take a picture of my kitchen post experiment? The mess was epic. Truly. Why the epic mess? Well friends, I was on a mission to find a new Curried Chicken Salad recipe to replace my long standing go-to. After an exhaustive internet scouring, I determined that it would be infinitely more fun to test a bunch of different ingredients and “invent” my own version based on the results. I was right.
